Tacos al Pastor
Tacos al pastor are one of Mexico's most famous speciality dishes.
Al pastor (Spanish; "Shepherd style") is a dish developed in México City, likely as a result of the adoption of the Shawarma spit-grilled meat brought by Lebanese immigrants to Mexico.
There are taquerías (taco establishments) all over the city that are dedicated mostly or exclusively to making these kind of tacos.
Tacos al Pastor are made from pork that has been marinated in a delicious recipe of spices and herbs such as achiote and then slow cooked in a vertical rotisserie called a Trompo (lit: spinning top) with a pineapple on top.
When ready, the meat is then thinly sliced off the spit with a large knife. Tacos are made with corn tortillas and topped with cilantro, chopped onion, small pineapple slices and lime juice.
"But as with any good taco, it cannot be complete without a great spicy salsa... which leads me to my next favorite topic in the World: salsas."
"As a Mexico City native, I would say that Tacos al Pastor is one of my favorite meals. I can eat these tacos at any time of the day!"
